For making Soba he start by preparing large pan to make dashi stock. next, he adds the mirin and simmers it gently for a few minutes. after that, he adds sugar and let it dissolve before adding the soy sauce which makes the soup for soba noodle. In the separate pan bring 1L of water to the boil, add the soba and stir them slightly to make sure they're spread out around the pot. Reduce the heat to a simmer and cook until the noodles ready. After that he drains the noodles and rinses them in cold water, gently rubbing the noodles to remove any excess starch on the surface. Next he, thinly slice the spring onions and any other garnishes. Gently reheat the stock and pour into bowls, then add the noodles and garnish with spring onions and tempura.

Then he put them together on the food tray with a glass of ocha. After that, he brings the food to my table. I started eating the food he prepares.

After finishing my breakfast I leave the bar and walking around the capital.
